Bartolomeo Scappi was a famous Italian Renaissance Chef. During this time with the middle class gaining wealth, people could afford to eat more extravagant food. Scappi distinguished himself by writing a recipe book with over a thousand recipes in it, which contains the earliest known picture of a fork. He declared Parmesan cheese to be the best cheese on Earth, and noted the raising of geese by Jews to be between three to five pounds, suggesting the practice of making foie gras.
